    6 medium potatoes
    2 carrots
    6 stalks celery
    64 oz. water (2 quarts)
    1 chopped onion
    6 tablespoons light butter/margerine
    6 tablespoons flour
    1 teaspoon salt
    1/2 teaspoon pepper
    1 1/2 cups fat free milk


Peel and slice potatoes; dice the carrots and celery and place in large saucepan. Cover with water and cook until tender. Drain (reserving the liquid) and set veggies aside.

In same saucepan, saute the onion in butter until soft. stir in the flour, salt and pepper. Add milk, gradually and cook until thickened (about 5 minutes). Stir in cooked veggies carefully (to not mash them). Add reserved liquid, 1/2 cup at a time, until soup is at a desired consistancy.

Makes 8 servings of about one cup each.
