    4 eggs
    1 cup oil
    2 cups finely grated zucchini
    2 cups sugar
    1 tsp baking soda
    3 tsp cinnamon
    1 tsp salt
    2 tsp vanilla
    2 cups flour


Beat together eggs, oil and zucchini. Add remaining ingredients.

Bake @ 325 for 1 hour & 20 minutes.

Yields 2 loaves. (12 slices each)
