Number of Servings: 20


    * Flour Tortillas, 10 tortilla (approx 7-8" dia) )
    * Pie fillings, canned, apple, 1 can (21 oz)
    * *Margarine, soft, .5 cup
    * Granulated Sugar, .5 cup
    * Brown Sugar, .5 cup, packed
    * Water, tap, .5 cup
    * Cinnamon, ground, 1 tbsp


Warm tortillas in the microwave for about 20 seconds to make them pliable. Spoon fruit evenly in the center of the tortillas, Sprinkle with cinnamon. Roll tortillas part way, tuck in ends and finish rolling. Place seam side down in 9 x 12 cake pan. Bring butter, sugars and water to a boil. Reduce heat to simmer, stir constantly three minutes. Pour over the tortillas and sprinkle with more cinnamon. Bake 20 minutes at 350 degrees. Take from oven, turn the enchilada over, cover the pan with foil and bake for an additional 5 minutes. Cut each enchilada in half and serve. Ice cram can be put on top and you can use any flavor pie filling you like
