    1 tbsp I can't believe it's not butter
    3 cups baby spinach
    5 eggs
    4 oz reduced fat feta cheese
    1/2 cup bisquick
    1/2 cup 2% milk
    3 slices onion
    onion powder to taste
    garlic if desired
    pepper to taste
    salt to taste


Melt pat of butter in skillet
Saute spinach/onions/pepper, garlic and onion powder if desired over medium heat. Meanwhile mix 1/2 c. bisquick with enough milk to hold together well - less than 1/4 cup. drop small pieces of bisquick dough into skillet; sprinkle 1/2 the fetal cheese on top, cover so the bisquick cooks through.
In a saucepan, melt the other pat of butter. Wisk together 1/4 cup mik with the eggs, add pepper and a pinch of salt; scramble in the sauce pan.
Using a spatula, turn the spinach mixture well and spread it the pan. Mix in the scrambled egg and cover with remaining feta - Serve!
Make 4 servings or enough for a hungry hubby (x3) and you!
