    16 ounces ground turkey breast
    2 slices multi grain, high fiber bread
    1/2 cup egg substitute
    1/4 cup grated parmesan cheese
    2 teaspoons lemon zest
    2 teaspoons orange zest
    1/4 cup chopped fresh parsley
    1/4 teaspoon ground pepper

    3 cups tomato-basil pasta sauce
    1 cup water


Preheat oven to 350*.

Tear bread into pieces and pulse in food processer until you have fine crumbs.

Combine turkey, cheese, orange and lemon zest, parsley, pepper and bread crumbs in suitable bowl and knead until well combined.

Spray a baking dish with cooking spray and add pasta sauce and water.

Using a spoon, scoop up and form by hand into 24 meatballs. Place into baking dish. Cover with aluminum foil and bake for about 40 minutes.

This also works well with an electric skillet. Only turn on once all meatballs are placed into sauce.

Serve with whole-wheat or high fiber pasta. Makes 6 servings.
