    1 medium eggplant, cubed; 2 c. zucchini, sliced; 1 medium onion, chopped; 5 T. olive oil; 3 medium tomatoes, chopped; 6 oz. mozzarella cheese, shredded; 1/2 t. basil or rosemary; 1/2 t. oregano; 1/2 t. salt; dash of pepper


Saute eggplant, onion, and zucchini in oil until tender. Add tomatoes. Simmer for 5 minutes. Add cheese and seasonings. Simmer until cheese melts. Serve over hot brown rice. Yield: 6 servings
