An easy recipe using canned lentils and canned mushrooms with sauteed onions and brown rice. An easy recipe using canned lentils and canned mushrooms with sauteed onions and brown rice.
Number of Servings: 4


    1 Medium Sized Onion, finely sliced
    1 Tbsp Olive Oil
    1 Tbsp Cumin seed, ground
    1 Tbsp Coriander seed, ground
    1 Can of Mushrooms, drained
    1 Can of Lentils, rinsed and drained
    2 Cups Long Grain Brown Rice, cooked
    Salt and Pepper to taste (approx 1/2 tsp each)


Begin by putting the long grain brown rice on to cook according to the directions on the package. (One cup of dry rice will make approximately 2 cups of cooked rice.)

Cut the onion into thin slices and chop into bite sized pieces.

Heat the olive oil in a large pan and add the onion.

Cook the onion until the edges begin to turn a golden brown colour.

Add the cumin and coriander and mix well.

Add the mushrooms and lentils, mixing well again. There should be a bit of liquid in the bottom of the pan. If not, add 1-3 Tbsp of water just to keep the mixture moist.

Heat the mixture over medium-low heat until your rice has finished cooking.

Add the cooked rice to the mixture in the pan, mix thoroughly.

Add salt and pepper to taste.
