    1/2 C Egg Beaters (egg substitute)
    1/2 C sliced fresh mushrooms
    1/4 C red, yellow green peppers, diced
    1Tbs chopped onion
    1/4 C Cheddar cheese (fat free)
    Cooking spray


Spray fry pan with butter spray. Saute onions, mushrooms, and peppers and cook until mushrooms turn brown. Add egg substitute and continue cooking until firm. Top with cheese and remove to serving plate.
Makes 1 large serving
