    Butter, unsalted, 2 tbsp
    *Flour, white 3Tbs
    Pepper, black 1/4 tsp
    Milk, nonfat, 1.5 cup
    Low fat shredded cheese 1/2 cup
    5 medium thin sliced potatoes
    Onion thin sliced 1/2


In a small nonstick skillet melt butter. Stir in the flour and pepper until smooth and gradually add the milk. Bring to a boil. Cook and stir for 2 minutes until thickend. Remove from heat and stir in cheese until blended. Place half the potatoes in a 1 1/2 quart baking dish coated with cooking spray. Layer half the onion and cheese sauce and repeat the layers. cover and bake at 350 for 50 min. Uncover and bake for 15 min longer until potatoes are bubbly and tender.
