Ingredients

    1 Tb. brown sugar
    4 tsp. sesame oil
    3 Tb. low-sodium soy sauce
    1/4 cup tahini
    1 cup cauliflower and zucchini puree
    1/4 cup rice wine vinegar or cider vinegar
    2 or 3 cloves of garlic, minced
    1 pound soba noodles or thin spaghetti

Directions

Whisk all ingredients except noodles in a medium-size bowl until the sugar dissolves and the mixture is thoroughly blended. Then put the cooked noodles into a large bowl and toss with the sauce. Add sliced green onions and toasted sesame seeds if desired. Best served cold.
