    2 cups of fresh broccoli, chopped
    2 cups of fresh cauliflower, chopped
    1 cup cooked rice, I use brown or wild rice
    1 can condensed mushroom soup - substitute with my home made recipe if need gluten free.
    1 cup low fat shredded cheddar cheese


place the broccoli, cauliflower, and cooked rice in a casserole dish. In a separate bowl, mix the cream of mushroom soup with the cheddar cheese. Pour over the other items in the casserole dish. Place in the oven at 375 degrees for 25 minutes.
