    1 lb chicken breast cut into small pieces
    2 medium potatoes cubed
    1 onion diced
    1/2 T olive oil
    1 can Rotel tomatoes with green chile
    1/2 cup shredded monterey jack and colby cheese
    8 flour tortillas


Cut chicken breast and potatoes into small cubes and saute with onions in medium frying pan over medium heat for 10 minutes. Add canned tomatoes with green chile including all liquid and simmer until chicken is done, potatoes are tender and liquid is absorbed. You may need to add more water if chicken or potatoes are not done.

Heat tortillas in bag in microwave for about 1 minute until they are pliable. Place one eighth of chicken mixture onto warmed tortilla, top with 1 oz. cheese and roll tortilla into a burito by folding one edge of the tortilla in towards the mixture and then folding the edge closest to you over the chicken and cheese mixture and rolling the torilla like a jelly roll.
