    4 medium bananas
    3/4 cup whole wheat flour
    1/4 cup spelt flour
    1/2 tsp baking soda
    1/4 tsp baking powder
    1/2 tsp salt
    1 tsp ground cinnamon
    dash of nutmeg
    dash of cardamom
    1 tsp vanilla extract
    2 egg whites
    1/4 cup agave nectar
    1/4 cup safflower or canola oil
    1/2 cup pureed carrots
    1/4 cup unsweetened applesauce


Preheat oven to 350 degrees.
In a bowl, combine all dry ingredients. Set aside.
In another bowl, mash bananas. Add wet ingredients to bananas and combine. Add the wet mixture to the dry ingredients, and mix until just barely blended.
Pour batter into 2 loaf pans.
Bake for 50-55 minutes.

Makes 2 loaves. 10 slices per loaf.
