Introduction

Vary the veggies to your liking. This would also work well with leftover cooked veggies, but use fresh onion. We devised this recipe the morning after a huge Christmas gathering. Number of Servings: 4

Ingredients

    4 large eggs
    1/4 cup water
    --------------------------
    .5 TBLS olive oil
    .5 teaspoon soft margarine
    .5 cup red onion
    .75 cup broccoli
    4 or 5 spears asparagus
    2 large mushrooms
    .25 cups chopped red and green pepper
    1/8 tsp seasoned salt (.125 teaspoon)
    .5 cup turkey/chicken breast
    1/8 cup (.125cup) swiss cheese
    .25 cups water



Directions

Scramble eggs with 1/4 cup of water. Set aside.

In non-stick frying pan, stir fry remaining ingredients, except the cheese. The final amount of water is to steam the veggies if you wish, so cooking time will vary.
Sprinkle top with 1 TBLS. swiss cheese.

Pour egg mixture into pan, on top of cooked ingredients.
Sprinkle with second 1 TBLS swiss cheese. (I estimated a total of 1/8 cup total cheese for this calculation.)

Cover pan, and cook about 10 minutes, until the eggs are formed.
Cut in four..... note that serving size is for 1/4 of the fajita. My pan was 10 inches round
