Introduction
I took a traditional navy bean soup recipe and omitted the bacon and ham and added tomatoes and spinach for added color and vitamins. It is easily made vegetarian by substituting vegetable stock for the chicken broth. For those on a low-sodium diet, low-sodium broth and tomatoes could also be substituted. Enjoy!! Ingredients

2 tsp. olive oil
1 large onion, chopped
2 carrots, chopped
5 celery stalks, chopped
3 garlic cloves, minced
3 (16 oz.) cans navy beans, rinsed
1 (32 oz.) carton chicken broth
1 (8 oz.) can tomato sauce
1 (14.5 oz.) can fire roasted diced tomatoes
1 tsp black pepper
1 T dried italian herb seasoning (found in spice aisle)
Directions
Heat olive oil in dutch oven over moderate heat. Add chopped onions, carrots, celery and minced garlic and cook until soft. Add the remaining ingredients and heat through.
