Ingredients

    Ingredients:


    Chicken Breast, no skin, 12 ounces (remove)
    Micasa canned black beans, 1.5 cup (remove)
    Celery, raw, 1 cup, diced (remove)
    Jalapeno Peppers, 0.5 pepper (remove)
    Garlic, 2 cloves (remove)
    Canned Tomatoes, 794 grams (remove)
    Onions, raw, 1 cup, chopped (remove)
    Green Peppers (bell peppers), 1 cup, chopped (remove)
    Summer squash, 1.5 cup slices (remove)
    Oregano, ground, 0.5 tsp (remove)
    Chili powder, 2 tsp (remove)


Directions

Makes six servings, one cup each. Tastes great over brown rice.

Coat pot bottom with nonstick cooking spray and heat over med-high heat for 1 minute. Add garlic and chicken and saute until chicken is lightly browned.

Add all other ingredients, except squash, stir. Bring to a boil then reduce heat to low. Cover and simmer, stirring occasionally for about 15 minutes.

Add squash, return cover and simmer for another 10 minutes or until squash is tender.
