Introduction

These work great for peanut allergies with soynut butter. That also lowers the fat content a little. These work great for peanut allergies with soynut butter. That also lowers the fat content a little.

Ingredients

    5 dried apricot halves
    2 Tbl. water
    1/4 cup peanut or soynut butter
    1 cup packed brown sugar
    1 cup whole wheat flour
    1 tsp baking powder
    3/4 tsp salt

Directions

Makes 12 cookies.
Boil 2 Tbl. water with the apricots. Blend in blender or food mill until smooth. Add the sugar and peanut or soynut butter to the apricot spread. Add the flour, salt and baking pwder. Put on a cookie sheet in ball (mixture is crumbly). Flatten with a fork criss-cross. Bake at 325 for 9-10 minutes. They scorch easily.
