Introduction

This is a very refreshing salad/side dish that's healthy too. This is a very refreshing salad/side dish that's healthy too.
Number of Servings: 8

Ingredients

    2 Cups trader joe's whole wheat couscous
    1.5 cups water
    .25 cup olive oil
    juice of 2 limes or lemons
    1 large tomato diced
    1 bunch green onions chopped
    .5 cup parsley
    2 tsps grated ginger root
    6 cloves garlic
    1 tsp salt or to taste
    hot red pepper to taste

Directions

place water in a pot and bring to boil. remove from heat and add couscous, stir and cover lid.; fluff with fork occassionally. In the mean time dice all vegetables, grate ginger and garlic; combine in a bowl add salt and other spices of choice; mix with couscous in a bowl and add olive oil and lemon or lime juice. Mix well.
Makes 8 1 cup servings.
