    4 cups peaches, pealed and sliced
    2 cups sugar, divided
    1/2 cup water
    8 tablespoons butter
    1 1/2 cups self-rising flour
    1 1/2 cups milk


Preheat oven to 350. Combine peaches, 1 cup (or less) sugar and water in saucepan and mix well. Bring to a boil and simmer for 10 minutes. Put the butter in a deep baking dish and place in oven to melt. Mix remaining sugar, flour, and milk slowly to prevent clumping. Pour mixture over melted butter. Do not stir. Spoon fruit on top, gently pouring in syrup (optional). Batter will rise to top during baking. Bake 30 to 45 minutes

  • I made this for Thanksgiving this year and I was not happy with it. My husband loved it. The thing I did not like was there was no syrup. It was cake like. Now, it could be my fault. I may not have used a deep enough baking dish. Again, my husband LOVED it because the batter was sweet. I didn't. - 12/3/09
