    Angel Hair Pasta (1lb)

    (1 - 2 cans) Canned Clams depends on how much clams you like.

    1.5 tbsp Minced or sliced Garlic 3 cloves(Elephant Garlic is Mild and Yummy!) Definitely my choice. Find in any supermarket, by produce)

    1 small Yellow Onion diced

    Fresh Basil (10 leafs) chopped

    1 Can of diced tomatoes or fresh Roma Tomatoes 1 & 1/2 cups of diced or sliced

    2 Fresh Lemons or 1/2 cup lemon juice (it's your choice I like fresh)

    1-2 cups Wine of choice ( I use Carlo Rossi Paisano Table Wine my favorite) YUMMY! (Your decide how much wine you like)

    Pepper to taste

    Salt (for pasta water)

    Olive Oil

    Butter or Margarine Smart Balance makes a good healthy version

    Chicken Bullion or Broth


    Pinch of Salt if desired to taste if not restricting sodium, or use alternative no sodium options.


Serves a family of 6

Get pot of water ready to boil your angel hair pasta add a pinch of salt to help the boiling process.

In a separate pan use a good size saute pan so you can add water etc. later on:

Saute your Garlic and chopped onions in some olive oil cook until onions caramelize.

Then add your clams to the same pan as the garlic and onions sprinkle with pepper, squeeze fresh lemon juice over your clams or pour about 4 tablespoons of lemon juice over clams.

Add one table spoon of butter or margarine to the sauteing ingredients.

After the butter melts, pour in about 1/2 cup of wine. (YUMMY!) Have a sip if you'd like!

Pour in the diced can of tomatoes

sprinkle pepper to taste

add the fresh chopped basil all of it (YUMMY)

Pour some more wine in.

Turn that pot of water for pasta on high heat with lid on and get ready to add you angel hair pasta when water boils, DO NOT OVER COOK! Cook till andante.
Don't empty all that starchy water when pasta is done. Get a ladle and keep about 2 cups of that nice starchy water aside for your pasta.

Back to clam tomato mixture
Add a one packet or one chicken cube bullion to the tomatoes,(if using chicken broth add one cup and do not add water) add a cup of water. Squeeze in some more lemon or add about 2 more tablespoons of lemon juice.
Simmer on medium to low heat.

When Pasta is ready add a table spoon of butter or margarine and a cup of starchy water and mix together then pour over the sauteed ingredients of clams, tomatoes, garlic etc. Mix it all together. You might need to add another cup of the starchy water, the mixture should be light and have a little bit of a broth base.

This meal goes well with a nice European Salad Blend with Some Black Olives and a nice Italian Vinaigrette Dressing.
