Ingredients

1 tsp olive oil
3 medium garlic clove(s), minced
1 small onion about a 1/2 cup
1/2 tsp dried tarragon
14 1/2 oz canned diced tomatoes or you can use crushed tomato's if you prefer a smoother sauce
8 oz canned tomato sauce
2 oz vodka, about 1/4 cup
1 tsp cornstarch
1/2 cup(s) fat-free skim milk
1/4 cup(s) basil, fresh, chopped
16oz uncooked fusilli, cooked and kept hot
Directions
Heat oil in a large skillet over medium-high heat. Add garlic and sauté 1 minute. Add tarragon and stir to coat. Add diced tomatoes, tomato sauce and vodka; simmer 10 minutes or until vodka reduces. Simmer 20 minutes.
Dissolve cornstarch in milk and whisk until blended. Add mixture to skillet and simmer 1 minute, until sauce thickens. Remove from heat and stir in basil.
Transfer pasta to four individual shallow bowls. Pour vodka sauce over top and serve hot. Yields 4 servings

This was good but didn't taste like pasta alla vodka, so I was disappointed because I went into making and eating it thinking that. Though it was a tasty sauce! - 6/18/09

I am sorry that you were a little disappointed, it is a very light version unfortunatly when you trade out heavy cream for lowfat/skim milk it does lose a little of that. You can try whole milk if you want a creamier more vodka like taste. Thanks for making this and taking the time to respond. Bye.
