    12 oz skinless, boneless, chicken breast halves, cut into bite size pieces

    1 tsp chili powder

    2 cloves garlic, minced

    1 tbsp Extra Virgin Olive Oil

    2 (14oz) black beans, rinsed

    1 cup frozen corn

    1 (14oz) Mexican-style stewed tomatoes, cut up

    Mozzerella cheese (1 oz per serving)

    Tortilla chips (1oz per serving)


1. In a bowl, toss chicken with chili powder.
2. In a 4-quart pot cook gar;ic in hot oil over medium heat for 15 sec and add chicken, stirring, 3 min.
3. Add broth, 1 1/2 cups of water, beans and corn. Bring to a boil, stirring frequently. Reduce heat and simmer, covered for 10 min.
4. Stir in tomatoes; heat through Top each with fresh cilantro, mozzerella cheese, and tortilla chips.
