Ingredients

8 large eggs
8 ounces cottage cheese
4 ounces feta cheese
4 wedges Laughing Cow Swiss Cheese
10 ounce package of chopped spinach (Thawed and squeezed dry)
Directions
Preheat oven to 350F

Squeeze all the water out of your thawed spinach and set aside.

Spray a 9 X 13 baking pan with nonstick spray.

In a large bowl beat the eggs. Add in the cottage and feta cheese. Open the Laughing Cow Cheese and crumble the wedges into the egg mixture. Stir to combine all the ingredients. Add salt and pepper to taste. Add in the spinach and mix to distribute it through out the egg mixture. Pour into baking pan and cook for 50 minutes.

Check to see if eggs are cooked through. A knife inserted should come out clean. If not then cook for an additional 10 minutes and recheck.
