Ingredients

    4 boneless chicken breast halves, skins removed--I cut them in half so I have eight pieces
    2 Tablespoons plain bread crumbs (I make out of 1 piece of toasted bread--put through my food processor)
    2 Tablespoons all-purpose flour
    ½ teaspoon salt
    ¼ teaspoon pepper
    2 Tablespoons olive oil
    1 Tablespoon chopped fresh rosemary leaves
    ¾ cup sliced green onions, including some green
    3 Tablespoons apple or white grape juice
    2 Tablespoons water
    1 teaspoon chicken bouillon granules

Directions

Dredge chicken in mixture of flour, breadcrumbs, salt and pepper.
In a large non-stick skillet, brown chicken in hot oil for 5 minutes. Turn chicken, sprinkle with rosemary, and add green onions. Cook 4 to 5 minutes until chicken is no longer pink when cut in thickest portion. Baste with a mixture of juice, water and bouillon granules. Cook and stir 1 minute or until green onions are tender, basting chicken with juices.

Serve with pasta.

Makes eight serving. 1/2 a breast each.
