    3 scallions
    2-3 cloves garlic
    1 cup chopped green bell or poblano peppers
    1 cup quinoa
    3 cups water
    1 cup tomato sauce
    4 oz romano cheese


sautee, scallions garlic and peppers. rinse and drain quinoa, add to pot with veg. brown quinoa and add water. simmer until quinoa is tender. add chopped spinach until it is wilted. mix and serve topped with tomato sauce and cheese.
