Number of Servings: 6


    --1 whole chicken, skinned (4-5 pounds)
    --2 tsp kosher salt (if you'd like it as salty as the ones in the store, add another 1 tsp.)
    --1 tsp paprika
    --1 tsp onion powder
    --1/2 tsp dried thyme
    --1 tsp Italian seasoning
    --1/2 tsp cayenne pepper
    --1/2 tsp black pepper
    --pinch of chili pepper (probably not necessary)

    --4 whole garlic cloves (optional)
    --1 yellow onion, quartered (optional)


Rub spices on chicken. Place in 6 qt crockpot and cook breast-side down for 4-5 hrs on low or 8 hours on high.

    The is a wonderful recipe! We really like the spice mixture! I cook my chicken breast side up and I am glad I did as I had half a crockmpot full of water in the end! I think you have the cooking time backwards! Should be 8 hours low, 4-5 high!! Thanks for this recipe!! - 7/14/09

  • No need to buy a special product that rotates and cooks a bird - this is the way to go. YUM! It was challenging to remove the skin before hand, a little gross, but worth the calorie and fat reduction. This was fall-off-the-bone delish. - 5/2/11
