    *Potato, raw, 1.5 cup shredded
    Onions, raw, 1 small chopped
    Yellow Bell Peppers .25 pepper, large chopped
    Spinach, fresh, 2 cup
    Broccoli, fresh, 2 cup, chopped
    Red Ripe Tomatoes, 1 medium whole chopped
    Garlic, 1 tsp minced
    Egg, fresh, 3 medium
    Kraft Mexican Style 4 Cheese Blend (2% Milk), 0.25 cup (remove)


Chop veggies and shred pototaoes coat potaoes with cooking spray salt and pepper to taste and line the bottom of a baking dish. place in a 425 oven for 20 mins while that bakes coat a skittlet with cooking spray and add remaining veggies and cook until broccoli is tender. After potatoes are baked add veggies to cover potatoes and them whip together eggs and pour over the veggies and sprinkle with the chesse and bake at 350 for another 20 mins.
