Introduction

This is an amazing no oil dressing that can go on salads, sandwiches, over fish, chicken, pasta, rice, the skies the limit! This is an amazing no oil dressing that can go on salads, sandwiches, over fish, chicken, pasta, rice, the skies the limit!
Number of Servings: 16

Ingredients

    1 block of Soft Tofu, cut into slices
    1/2 c. Zucchini, cubed
    3 cups Fresh Spinach
    20 Basil Leaves
    5 Tbsp Fresh Mint
    5 Tbsp Fresh cilantro
    1-2 Cloves Garlic, chopped
    1 Tsp Salt
    3 Tbsp Lemon Juice

Directions

Wash and dry all green leaves.
Chop zucchini into smallish chunks.
Slice tofu in half and then cut each half into slices.
Place zucchini, spinach, basil, mint, cilantro, garlic, salt, lemon juice into a blender or food processor. Blend until all ingredients become well chopped. Add the tofu slices. Pulse until desired consistancy, if thinner consistancy is desired add 1 Tbsp of water at a time until it reaches desired consistancy.
Taste for seasoning. Add salt, pepper, and cayenne pepper(optional) to taste.
Makes about a quart of dressing.
