Introduction

Tastes good as a topping for grilled fish. Tastes good as a topping for grilled fish.

Ingredients

    1/2 cup mango - peeled, cored, diced
    1/2 cup tomatoes - seeded and diced
    1/4 cup cucumber - seeded and diced
    1/4 cup onion - diced
    1/4 cup red pepper - diced
    2 Tbsp lime juice
    1 tsp dried Cilantro (or more to taste)
    dash of salt and pepper to taste

Directions

Dice all fruit and veggies and put in a bowl. Add juice and spices. Stir. Chill for at least 30 minutes prior to serving to allow juices to mingle.
May substitute green onions/chives for regular onions - makes it prettier. Also is better with fresh cilantro, but dried works ok too.
