    2 cups dry mixed beans
    1 cup brown rice
    1 can diced tomato (no salt added)
    1 cup diced onion
    1 cup diced celery
    2 cups frozen carrots
    2 cups frozen peas
    2 cups frozen corn
    1/2 lb. diced ham
    2 tsp. minced garlic
    2 tsp. chili powder
    10 cups water


Soak beans overnight in enough water to cover by one inch. Rinse the next day.

Combine all ingredients except rice in large crock pot (5 qt). Heat on high for 8 hours or until beans are tender. Add rice and cook for an additional 30 min. on low heat.
