Ingredients

    8 eggs
    1 cup broccoli, chopped
    3 mushrooms, chooped
    1/2 cup onions, chopped
    1/2 cup cheddar, shredded
    1 tsp olive oil
    1/3 cup low-fat sour cream

Directions

Preheat oven to 350 degrees. Spray 12-cupcake pan with non cook spray and set aside. Sautee veggies in 1 tsp olive oil for several minutes.

Whisk eggs together with sour cream in large bowl. Add veggies. Divide mixture into 12 cuipcake cups. Bake for 30 minutes.

Great warm or cold. (They reheat well, too!)
