    12 corn tortillas
    1 large can enchilada sauce
    1# lean hamburger
    1 can peas
    1 can potatoes (optional)
    1.5 Cup cheese


Cook meat, add peas and 3/4 of the sauce when meat is browned. Spray bottom of 9 x 13 pan. Heat tortilla shells in oil in pan on stove. Lay 6 tortilla shells on bottom of pan. Pour meat mixture over tortillas. Sprinkle 1/2 cheese on top of meat, then layer remaining six tortillas on top. Pour remaining sauce on top, sprinkle with remainder of the cheese. Bake at 350 for 15 minutes.

  • I think If you heat the tortillas in oil the calories would go up alot. I spray my corn tortillas with pam and then I heat them in the oven until they are pliable. Less Calories - 5/15/09
