Ingredients

    1 cup sugar
    1 tsp vanilla
    2 1/2 tsp baking powder
    1/4 tsp salt
    3/4 cup oil
    3 eggs or egg substitute
    3 1/4 cup flour
    1/2 cup chopped nuts
    cinnamon sugar

Directions

350 degrees for 15 minutes
Mix ingredients with electric mixer. Slightly flour cutting board. Divide batter into fourths and roll out each in a long cylinder roll and place on a cookie sheet. Remove one baked roll at a time and cut into 1/2 inch slices on a cutting board. Place cookies back on cookie sheet with the inside of them showing up. Place in oven for 5 minutes or until golden brown. Remove and turn cookies to brown the other side. Coat with cinnamon sugar. Put cinnamon sugar in plastic bag and put a few cookies in the bag at a time and shake to coat.
