    2 tbsp olive oil
    1 onion finely chopped
    1 garlic clove, crused
    1-2 small hot chillis finely chopped
    1 red 1 green pepper seeded and chopped
    100g chestnut mushrooms
    225g long grain rice
    850ml veg stock
    1/2 tsp paprika
    large pinch of saffron strands
    85g frozen peas


1. heat oil in frying pan and add onion cook for 2-3 mns. stirring occasionally until soft. add the garlic, chillis, peppers and mushrooms and cook for a further 2-3 mins. stirring occasionally.
2. stir in the rice and fry for 1 min.stin in the saffron and paprika. bring to the boil and simmer for 10-12 mins stirring occasionally. until rice is tender. (top up with water if need). stir in the peas and cook for a further 2-3 mins. season to taste.
serve immediately
