Ingredients

    1 tbsp sunflower oil
    1 onion, finely chopped
    1-2 small hot chillis chopped finely
    1 red peper, seeded and sliced
    2 garlic cloves, crushed
    230g can chopped tomatoes
    1 tsp tumeric
    300g long grain rice
    1.3lts veg stock
    450g prozen mixed seafood
    175g green beans
    handful of parsley

Directions

1. heat oil in a large frying pan and cook the onion pepper and chilli for 5 mins. until soft but not brown. stir in the garlic, tomatoes and tumeric. and cook for 1 min more, stirring occasionally.
2. tip in the rice and cook for 1 min stirring to coat the grains. pour in the stock, stir well and bring to the boil, then simmer uncovered for 8 mins, stirring occasionally, until the rice is is almost cooked and most o the stock has been absorbed.
3. add the seafood and beans and cook for 3-4 mins more. stir in the parsley and seanson.
