Introduction

Packed with vitamins, this salsa is really good on it's own with chips, in a salad, or used as a garnish with grilled chicken or even fish. The most time consuming thing is washing and chopping the vegetables but after that it's smooth sailing! If you can save half in the fridge for the next day, it marinates itself and tastes even better the second day. Ingredients

    1 Green Pepper
    1 Red Pepper
    1 Yellow Pepper
    8 Green Onions
    Cilantro
    (all ingredients above need to be chopped)
    1 can black beans, rinsed and drained
    2 cups frozen corn
    3T Balsamic Vinegar
    1/2 tsp. cumin
    few squirts of lime juice

Directions

After you wash and chop all of your veggies, mix them (including the frozen corn) into a large bowl with the balsamic vinegar. Continue adding the other ingredients. If you can contain yourself, put it all in the fridge to let it sit for about an hour so the flavor is soaked into all the little pieces. the bowl I use holds about 12 cups - this makes quite a bit of salsa!
