Ingredients

Potatoes, plain boiled, 150g, mashed
Lurpak lighter, 1 tbsp
Milk, nonfat, 2 tbsp
pinch of saffron strands
Spring Onions, 6, chopped
Half fat cheddar cheese, grated, 0.25 cup
Olive Oil, 1 tsp
Cod, raw weight, approx 600g, cut into 3 x 200g pieces
Directions
Heat the milk, add the saffron and the lurpak.
Heat the oil in a frypan and gently fry the spring onions until softened.
Add the milk and onions to the mash potato, season.
Place the cod portions on a non-stick baking tray, season, spread the top of each one with a 1/3 of the mashed potato mixture. Sprinkle on the shredded (grated) half fat cheese.
Place in oven at 220C (200C if fan assisted) and cook for approx 10 mins until the fish is cooked and the potato is golden.
