    3 tbsp butter
    2 small onions, peeled and thinly sliced
    2 tbsp curry powder
    2 large whole chicken breasts, deboned skined, cleaned and cut into large pieces
    2 cups heated chicken stock
    1 tbsp cornstarch
    2 tbsp cold water
    1/4 cup heavy cream (35%cooking cream)
    salt and pepper
    black olives


1) Heat butter in large frying pan. When hot add onions; cook 5-6 mins over medium heat. Stir occasionally.

2) Mix in curry powder; cook 3-4 mins over low heat.

3) Add chicken pcs, stir and season well (salt&pepper). Cook 2-3 mins over medium heat.

4) Pour in chicken stock and bring to boil. Reduce heat to medium-low and cook 9-10 mins.

5) Mix cornstarch with water. Stir into sauce. Cook 1 min.

6) Add cream and bring to boil; cook 2-3 mins and season again to taste. Add sliced black olives and serve.

Serves 4.
