    1.5lb ground sirloin
    1/2 onion
    5slices of whole wheat bread (crumbs)
    1c milk
    1egg white


Soak bread crumbs in milk for five min. Cook diced onion in a pan till tender. In a food processor mix meat, onion, bread crumbs and seasonings. Mix on high for about 3-5 min until fluffy. This is a very wet meatball mix, so wet your hands before forming into 1.5" meatballs. Cook about 10 at a time in a pan lightly oiled as needed, shaking the pan often to keep the meatballs round as they cook. (takes practice) Cook the meatballs until almost done then place them in the gravy to finish.
To make the gravy, mix stock, with coffee and water. Whisk in 2tbs of flour and bring to a boil... don't forget to whisk as it comes up to temp otherwise it clumps. To make this gravy richer you can beef it up with a bullion cube.
Serve over noodles or baked potato. Enjoy.
