    16 oz. Chicken Breast, no skin, cut into cubes)
    8 oz. Whole Wheat Penne
    1 tsp. Olive Oil
    6 cloves Garlic
    16 oz. Ricotta cheese, fat-free
    1/2 cup Parmesan Cheese, grated
    juice & zest from 2 lemons
    1/2 tsp. freshly ground black pepper
    pinch of nutmeg
    1 10 oz. package frozen spinach


Cook penne in lightly salted water. While pasta is cooking, lightly salt chicken and brown in olive oil When cooked through, toss in garlic and cook for 1 minute. Add Ricotta cheese, lemon zest & juice, pepper, nutmeg, spinach and 1/4 cup of parmesan. Salt to taste. Add chicken stock, or pasta water until sauce is desired consistency. Stir in drained pasta and heat everything until bubbly. Top with rest of parmesan cheese.
