Number of Servings: 4


    4 Wraps or Tortillas
    1/4 cup Hummus
    110 g Mushrooms
    1 medium Green Pepper
    1/2 medium Zucchini
    1/2 medium Eggplant
    1 medium Onion
    1 Tbsp Olive Oil
    2 Tbsp mixed herbs (whatever you like)
    1 tsp Salt
    1.5 tsp Pepper


Preheat oven to 375 Fahrenheit.

Julienne all vegetables. Toss with oil and herbs. Lay out enough foil to make a packet around the vegetables. Place vegetables in center of packet. Seal foil into a packet. Bake for about 20-25 minutes, or until vegetables are soft.

Heat wraps according to package directions. Spread hummus down center of wraps. Place a quarter of vegetable mixture down the center of each wrap. Fold wrap around filling. Enjoy!

The vegetable mix keeps well, so I make this and use it for a couple lunches during the course of the week.
