    4 Eggs
    2 cups pinto beans
    6 Corn Tortillas
    2 cups Spinach
    1 cup lowfat Buttermilk
    1 cup Cheddar Cheese
    1 slice Pork Sausage, cooked and crumbled


Layer casserole dish with 4 tortillas (save other 2). Spread beans over the "crust".)

Mix buttermilk and eggs together in glass.

Cook sausage and spinach together in pan. When cooked through, mix in buttermilk and eggs.

Spread mixture over top of beans. Top with cheddar cheese and reserved 2 corn tortillas, torn up into strips.

  • We changed this recipe slightly as we did not have any slice of sausage. We had chorizo instead. It gave the dish a nice kick. We also cooked the casserole at 375F for 15 mins as the heating instructions were missing. Even our picky eaters liked it! - 5/13/11
