Ingredients

1 lb Skinless, boneless chicken breast
4 Tbs. yellow mustard
1/4 cup orange juice
1 Tbs. brown sugar
1 tsp salt
1 clove garlic crushed and finely chopped
1 Tbs. dry basil
3 cups brown rice
Directions
cut chicken into two even filets.
Mix together mustard, orange juice, brown sugar, salt, garlic, and basil.
Place chicken in a sealable plastic bag, coat with mustard sauce and place in refrigerator to marinate for 15-30 minutes.
Cook brown rice per package instructions
place chicken in saute pan coated lightly with non-stick cooking spray, cover and cook over medium heat. Flip chicken breast and cook an additional 8 minutes.
Put chicken over 1.5 cups rice and pour additional sauce on top.
Serve and enjoy.
