Introduction

Ingredients

    1.25 cups all purpose flour
    2 tbsp sugar
    1 tbsp baking powder
    .75 tsp salt
    1 egg
    1 to 1.25 c milk
    1 c. Sherwood (sour dough starter)
    3 tbsp Canola Oil

Directions

Combine in a mixing bowl, flour, sugar, baking powder and salt. Stir well to blend. Beat egg, milk, Sherwood and oil together in a small bowl. Add liquid ingredients to dry ingredients all at once, beating until smooth. Pour batter by .25 cupfuls onto preheated, lightly greased griddle. Bake until puffy and bubbles break on surface. Turn and cook other side. Serve hot. Makes 12.

For thinner pancakes, use the extra .25 cup of milk. The addition of another .25 cup of milk may be necessary as batter thickens quickly on standing.
