    2 cups mixed spring greens
    2.6 ounce tuna pack
    1 red potato, about 3 ounces
    2 ounces fresh green beans, left whole or snapped in half.
    1 hard boiled egg, quartered
    1 Roma tomato, quartered
    1 ounce black olives, like niçoise or Kalamata, halved
    2 tablespoons dijon vinaigrette


Steam the new potato. When just about done, add green beans and steam until tender-crisp. Remove potato and beans and set aside to cool. Once potato is cool, cut into six wedges.

Toss greens with 1 tablespoon of dressing then arrange on plate. Placed tuna in middle of greans. Arrange potato, beans, egg, tomato and olives on greens. Top with remaining vinaigrette.

Makes one serving.
