Ingredients

    10 eggs, separated
    3/4 cup unsalted butter
    2/3 cup sugar
    12 oz. semi-sweet chocolate
    6 Tbsp unsweetened cocoa

Directions

Prepare 10-inch springform pan - lightly grease bottom of pan. Cut parchment paper to fit in bottom and place there. Then, lightly grease bottom and sides of pan.

Over boiling water, melt butter and chocolate. Add cocoa and stir until smoothly blended. Set aside.

I large bowl, beat egg whites on high until fluffy. Add sugar, a spoonful at a time, until stiff and glossy. Set aside.

Beat egg yolks for 5 minutes, until they begin to thicken. Add chocolate mixture to yolks and stir until thoroughly blended. Add 1/4 egg white mixture and stir. Gently fold in rest of egg whites.

Put batter into prepared pan and bake at 350 degrees for 45 minutes. Cool completely on wire rack. May be served with berries.
