    1 lb ground turkey, cooked/browned
    1 can red enchilada sauce
    1 can cream of mushroom soup, low-fat
    1/2 cup milk, 1%
    1/4 cup onion, chopped
    5 flour tortillas, quartered
    1 cup reduced fat Mexican shredded cheese mix


Brown turkey and onion. Add soup mix, enchilada sauce and milk. Warm. Put a little sauce in the bottom of a 2-qt round casserole dish. Next layer one tortilla (cut into 4 pieces), sauce, cheese and repeat 5 times ending with sauce on top. You may a little cheese to the top if you prefer more cheese. Bake at 350 degrees for 30 minutes. Take out of oven and let sit for 5-10 minutes before serving.
