Ingredients

    3 links lean Sweet Italian Turkey Sausage
    2 tbsp olive oil
    1 large onion, chopped
    2 cloves garlic, minced
    1 tsp oregano
    4c chicken broth
    1 can cannellini beans (15oz), rinsed
    3c fresh spinach, washed and chopped
    1 tbsp lemon juice

Directions

Remove sausage from its wrapping and saute in 1tbsp olive oil until no longer pink.
Set aside then saute onion in 1 tbsp olive oil for 5-7min, until soft. Add garlic and cook another minute. Add sausage, broth and oregano and let simmer for 20min. Add spinach and let simmer until wilted, 10-20min. Add lemon juice, remove from heat and serve.
Makes 6 1cup servings.

    Loved it. Used low sodium broth, but was still a bit salty, I think I would replace one cup of broth with water, or add a bit of water to make it more brothy. - 4/7/11

    We really loved it and I will definitely make it again but I will use reduced sodium broth. Between the sausage, broth, and dash of Parmesan cheese we added to the top it was too salty. While I was making the soup I was a little scared but it turned out awesome. Def a keeper! Thanks! - 8/8/10
