Introduction

This sandwich was inspired by a sandwich I used to eat at a gourmet restaurant. It had shitake mushrooms in it and I am not sure the other ingredients that were used, since it was years ago, but I love playing around with different ideas. After tasting this, it was so delicious I had to share it. This sandwich was inspired by a sandwich I used to eat at a gourmet restaurant. Ingredients

    Sliced porobella mushrooms
    two slices of red onion
    garlic
    fresh parsley
    dried basil
    olive oil
    country crock or butter
    mozerella cheese
    whole wheat bread

Directions

Begin by sauteeing the onion and garlic in the olive oil over low heat. Begin heating another pan on medium heat for grilling the sandwich. After the onion starts to look soft tear up sprigs of parsley into pieces, add to sautee mixture along with the basil, be sure to be mixing. After about one minute, when the parsley gets soft, add the mushrooms. The mushrooms should be sliced and be sure to mix all around in the pan to coat the mushroom with the flavorful mixture you have created. Now, start getting the bread ready like you are going to make a grilled cheese sandwich. Butter the outside of two slices of bread per sandwich, this recipe will make 4 sandwiches. So, butter all eight. By now, the shroom shuld be cooked. They should not be soft and mushy, do not over cook, they should still be relatively firm. Place one slice of bread on the all ready warmed pan from the beginning take one fouth of the mushroom mixture and add to top of bread that is being grilled, then immediately add 1/4 cup of mozerella cheese to the entire top, spread evenly over the bread and quickly place the second slice of bread, already buttered and waiting on top. Wait a couple of minutes for sandwich to grill checking frequently as to not burn. Once it it grilled to your desire, flip carefully so the insides don't spill out and grill the other side. Once completed grilling the sandwich is done! Do this three more times to finish all four sandwiches. It is delicious! Change things to your liking. Use sugar free whole wheat bread, add extra herbs to shroom mixture, add more onions if you like. Play around with it, you can't screw this up! It is healthy, vegetarian, low in calories and tastes wonderful!
