This is a Supper Solutions Recipe - very good! I prepare and package 2 servings/bag. Pork marinates as it thaws, and is an easy main dish that evening. This is a Supper Solutions Recipe - very good! I prepare and package 2 servings/bag. Pork marinates as it thaws, and is an easy main dish that evening.
Number of Servings: 6

Ingredients

    6 3oz pork tenderloin pieces
    2 C. salsa
    1 T. chopped green onions
    1 tsp. chopped garlic
    2 oz. lime juice
    1 C. black beans
    .25 C. shredded cheese (use low-fat to lower calorie/fat count)


Directions

Combine onion, garlic, salsa and pour over pork. Marinate 2-3 hrs. (or freeze until ready to use). Cook pork with salsa over medium heat in pan for 10 min, turning once. Add black beans last 5 minutes. Top with cheese and serve.
